Hey Daniel. Kind of surprised that you of all peeps had not been on or used Google Street View before. A great tool - I use it all the time both locally and also if I just want to randomly check out foreign places, especially in Mexico. For example, if you want to see something very cool, try street view at Machu Picchu (which I did last year when my sons were planning their trip to Peru). You'll find these "photospheres" allowing you to "drop" into that spot and spin 360 for unbelievable views of the site. Streets of nearby Cusco also fun to "street-view" through for fun. I can somehow see you spending many hours with street view, D. How about a "trip" to Comala and up one of the roads to the Colima volcano sometime? Enjoy...
As for La Manz., I would think that if Google surveyed the town, it would be available online. I think it's just not been included for whatever reason. Budget perhaps? The blurring of faces I'm pretty sure is probably easily done at little cost with a couple clicks of a mouse on face-finding software. "Find face, blur same..." But that's just a guess on my part.
