Easter Eggs

IMHO you can't have easter without the easter egg hunt - locating those beautifully coloured eggs and then making something with them. The only problem with dyeing eggs is the chemically-filled color tablets most people use. I found that there are MANY natural foods that can be used as dyes on a regular basis, and will work great for dyeing Easter eggs. Here’s the basic method: Combine 4 cups of water, 2-3 tablespoons of distilled white vinegar, and the dyeing ingredient. Bring to a boil and let simmer for 30 minutes. Strain the solution into a large bowl, and let the hard-boiled eggs steep in the solution for 30 minutes (lighter color) to 4 hours (deeper color). Here are some recommended ingredients for making a variety of colors. Typically, you should use about 4 cups of fresh produce or 1-2 tablespoons of a spice. Pink/Red Eggs: cranberries, raspberries, coarsely grated beets Yellow Eggs: ground turmeric, lemon or orange peels, chamomile or green tea Orange Eggs: chili powder, paprika Green Eggs: spinach, kale Blue Eggs: blueberries, blackberries Purple Eggs: hibiscus tea, red wine So go on - have fun with your kids and grandkids - and use those eggs for a very colourful egg salad!
