Hola Jo Anna! No problema with giving you (and I guess everyone else) the recipe I use. Simply puree 2 ripe avocados with 1/2 cup lemon juice and small can (5 oz) of sweetened condensed milk. Pour this into a graham cracker crumb crust (baked or not as is your preference) and chill for a few hours before serving. That's it! My latest twist on this was to drizzle a thin layer of melted dark chocolate over the crust before adding the filling and then topped it with whipped cream and generous curls of lemon zest when serving. So simple and so fabulous!
Now, I'm not sure whether the typical N.O.B. yellow lemons are available in LM (I don't remember seeing them per se), so you may have to adapt accordingly and use lime juice instead (or maybe half and half with orange juice and then orange rind on top?). Or then again Lidia probably has bottled lemon juice. Anyways, have fun with this recipe...
