Chile in Nogada - our version has a picadillo made of ground beef & pork, tomatoes, chiles,, dried and seasonal fresh fruits, seeds and seasonings. Stuffed into a marinated & roasted poblano chile, drizzled with a tangy sherry spiked creamy walnut sauce, pomegranate seeds --- beautiful & delicious
Pibil Roasted Pork - tender pork marinated in citrus fruits, anchiote seed paste & slow roasted until juicy. Served with local cheese crumbles, fresh cilantro - and tortillas!
We will have white rice and brown rice and the vegetarian spicy refried black beans are simmering away now
