Pescado Zarandeado is a fish split from head to tail, seasoned and grilled over firewood from the mangrove. The backbone was removed, but they kindly grilled that too, so we could pick out the tasty nuggets.
Chito's has a presence on the beach now, in a ramada just across the road, near the crossroad at the entrance.
I asked Maria, one of the owners who served us, how she felt about the recent assassination of Salvador Magaņa. He was a prominent leader of the fight to keep the beach at Tenacatita from being privatized. She said: 'There are other leaders - I am a leader too. They can't scare me. We won't give up.'
