The export standard of the fruit exported from the Ajijic area is of the highest international standard. All the soft fruits you see for sale everywhere are those which do not meet the export standard.
Mexicans do not eat rhubarb, don't think most of them even know what it is. So it's grown for export and will be seasonal, the export markets only want it when their home grown is not available.
I have an acquaintance that I see every few weeks who is manager of one of the export company's. When I see him I will ask if it's still being grown, when it may be available and how much a couple of boxes are.
It freezes well when cooked with sugar, and you may have to sell some to friends. Even convince one of the tradesmen to make rhubarb and apple pies.
