Yes, diabetes is big here in Mexico and with Mexicans abroad. We've always loved some fried food and of course, coke and sweets. And there are genetics which say we are prone to diabetes.
What saved us in the past was cooking from scratch and keeping away from processed foods. Not having extra bucks helped in this regard.
Now the meal scene has changed and we buy in places like OXXO. Have you seen how the snacks and cookie aisles have grown in our little grocery stores.
I'd like to pose other possible causes contributing to and triggering this growing epidemic, which this is. However, it's an opinion without links.
I think that the GMO oils found in cooking, frying and packaged snacks are big contributors, along with GMO flour and corn products, to the increasing incidence of diabetes. They are cheaper and is why they are being used. GMO corn syrup, fructose, is replacing our cane sugar. This item was imposed on us when Mexico joined NAFTA. Just saying.
How exactly these contribute to the relatively new gigantic increase in diabetes can be another discussion. Cruz
