You must be able to access you banking info online easily, and check it routinely for odd charges.
Call that 1-800 number on the back of your card immediately if anything suspicious shows up.
Dealing with a Debit card: Once they have your numbers, any money in that underlying checking or savings account is in jeopardy. Do Not Keep Large Balances just in case you might need it. You may find that money drained away. Bad guys often start with a fairly small charge or debit to establish a connection, then drain away based on your preset daily limit. Catch the small test amount and it's a minor problem to get it covered by your bank. Let it go a few days and then you wait until it gets resolved between banks, and you may or may not get all your money back.
Do not hand over your card to a waiter or clerk and Not Pay Attention to how it is used. Watch closely as they swipe your card and/or key in info. Better yet get cash at an ATM and put your cards with your passport in the safe.
For us we use an ATM for pesos and never plastic. rojo
