Simone, might I suggest you find a new hobby that doesn’t involve the death of our esteemed colleague the iguana? what would posses you to kill these mystical and divine animals? Try SUP, it’s a great core workout

Try Duck hunting instead, it is carefully regulated, wild duck is delicious, and duck hunter license fees pay a lions share of establishing and maintaining refuges that provide habitat for a myriad of wildlife. | -------------------Re: Iguana hunt

Just to be clear. The one time I tried iguana it was killed by a local in Oaxaca. They stewed it and offered me some. I figured it would be like snake or gator. Not so, it was bad enough I remember it unfavorably 50 years later. But maybe it was the preparation and I’m wondering it the first post was simply provocation | -------------------Re: Iguana hunt

Save the Iguanas - Eat the Ducks For those into the blood sports, there used to be guided Duck hunts available at Thule about an hour north of LaMamnz. The little restaurant on the Lake made a very nice, fresh caught, Large Mouth Bass lunch I always pluck ducks for cooking cause I really like the skin. I carefully debone the ribcage and breastbone. It is easy. You end up with two, skin on, breast strip, thigh and leg intact, half ducks. (This is the secret to getting the marinade to penatrate the meat, a lot of direct meat contact. If you try to marinade ducks whole, the skin, fat layer and ribcage/breastbone prevent the marinade from penetrating). I marinade these over night or the morning before dinner. Note: on teal I just make cuts on the breast each side of the breast plate bone as teal are too small to debone. Marinade: Soy Fresh garlic run through a press Fresh ground black pepper A dash of black rice vineger A splash of dry sherry A few drops of toasted sesame oil Half a teaspoon of apricot jam or chutney A small amount of chopped hot pepper I use a three burner Weber. I turn all three burners on until max temp. I then turn the center burner off and wait a couple of minutes and put the ducks in the center, close lid and cook for 14 minutes at 400-450 degrees. Medium rare (Pintails), turning once. The trick is to cook them fast under high heat, but not have them flame up and char. Good side dishes are a spinach salad (with rice wine vineger, olive oil, and garlic dressing) and baked yams, or wild rice. Great marinade (also works well with the black pepper and garlic only for Tri-Tip).

Monte it may be spelled Tule. There is a sign on the main highway heading north. You turn east, drive a short distance to a lake that has the restaurant that served the excellent Bass(Lobito) lunch. Folks fish for Bass in the lake. There are wetlands there where the Duck hunting occurs. A little background on the importance of Duck hunters. Funds from State and Federal Duck stamps hunters are required to buy fund wetland and nesting habitats from Alaska and Canada all the way down into Mexico. California Fish and Game Department director Pete Bontadelli came up with a plan to issue passes to bird watchers who frequent the Sacramento Wildlife Refuge. He created special viewing areas throughout the refuge that only folks with that pass could go. The thinking was this would be a way for birdwatchers to help pay the considerable costs of maintaining the refuge. The State of California spent one million dollars in setting up this program. What happened was virtually no bird watchers bought the passes and the State lost one million dollars. So next time you think about waterfowl, remember it it is the Duck hunters that pay the bills to maintain the refuges and land acquisitions to protect their habitat from Alaska to Mexico. Of their are thousands of species besides waterfowl that take full advantage of there complex habitats. | -------------------Re: Iguana hunt
