Norma's Fonda

A Fonda I learnt, is a place where they cook meals like typical people cook at their house – real traditional Mexican meals and a lot of it is usually not offered in normal restaurants. For example I have not seen Albondigas ( meat balls ) on a restaurant menus. and at norma's I got introduced to TINGA and CHILAYO, never heard of those before and ...WOW! What an excellent taste. Then MOLE, I never liked it before , but now – best mole I ever had – BUT they also make GREEN Mole, and now I have trouble choosing , they are different but both are delicious. Now Norma is talking about BREAKFAST – basically the usual eggs and chilaquiles BUT here comes another one – MOLLETES – some local folks convinced her to also offer these and inexpensive : ½ Mollete $ 20.- and the big one $ 40.- this was and still is a learning experience and the tastes ... | -------------------Re: Norma's Fonda

And thank you mucho Siegfried, for mentioning chilayo, also one I'd not heard of before. When I looked online, all the recipes seemed to be Colima style, so maybe this is an actual local dish - looks really easy and delicious. I'm definitely going to give it a go making it sometime.
